How to Make It
1. Prepare the Carrots
Preheat your oven to 425°F (220°C).
Wash and peel the carrots. Cut larger carrots lengthwise so the pieces are roughly similar in size and cook evenly.
Toss them with olive oil, melted butter, salt, pepper, and thyme.
2. Roast Until Caramelized
Arrange the carrots in a single layer on a baking sheet.
Roast for approximately 25–35 minutes, turning them once halfway through. They should become tender with beautifully browned, caramelized edges.
For even more color, give them a few additional minutes under the broiler while watching carefully.
3. Make the Cranberry-Honey Glaze
While the carrots roast, combine the dried cranberries, honey, orange juice, balsamic vinegar, orange zest, and a pinch of salt in a small saucepan.
Warm over low heat for 3–5 minutes, stirring occasionally, until the cranberries soften and the mixture becomes glossy.
If the glaze becomes too thick, add a small splash of water or orange juice.
4. Toast the Walnuts
Place the chopped walnuts in a dry skillet over medium-low heat.
Toast for about 3–5 minutes, stirring frequently, until fragrant and lightly golden. Remove them immediately so they don’t burn.
5. Assemble the Dish
Transfer the roasted carrots to a serving platter.
Drizzle the cranberry-honey glaze over them, then scatter the crumbled feta and toasted walnuts on top.
Finish with fresh parsley or thyme and a little orange zest.
